It’s apple season folks! I am a big fan of apples—fresh, baked, and even mixed into mustard—I like it all. This fall I’ve been particularly fond of SweeTango apples. They’re a cross between a Honeycrisp and a Zestar and have a delicious sweet crunch. Here’s a recipe for a not-too-sweet spiced quick bread using diced apples and natural sweeteners. I made mine using SweeTango seconds I picked up at a local orchard, but any sweet apple will work. Serve with cinnamon butter for a cozy autumn breakfast.

This recipe yields one loaf which is about 8-12 slices. It could also be modified to make one-dozen muffins. To make muffins reduce baking time accordingly (usually 20-30 minutes).

Ingredients

  • 2 Cups Flour
  • 1 Teaspoon Baking Powder
  • 1 Teaspoon Baking Soda
  • 3 Teaspoons Fall Baking Blend (below)
  • 1/2 Teaspoon Salt
  • 2 Large Eggs
  • 3/4 Cup Butter
  • 1/2 Cup Honey
  • 1/2 Cup Maple Syrup
  • 1 Teaspoon Vanilla Extract
  • 2 Cups Peeled, Diced Apples

I like to make a double or triple batch of this fall baking blend at the beginning of the season for breads, oatmeal, and other goodies. Feel free to adjust the ratios to suit your tastes.

Fall Baking Blend

  • 2T Cinnamon
  • 2t Allspice
  • 2t Nutmeg
  • 2t Ginger
  • 1t Cloves
  • ½T Cardamom

Instructions

  1. Preheat oven to 350 degrees F.
  2. Grease a loaf pan.
  3. Combine flour, baking powder, baking soda, fall baking blend, and slat in a large mixing bowl.
  4. Beat eggs, butter, honey, maple syrup and vanilla extract in a separate, medium mixing bowl.
  5. Stir in apples.
  6. Add apple mixture to dry ingredients and stir just enough to create a thick batter.
  7. Pour batter into the loaf pan.
  8. Bake for 45 minutes or until a toothpick inserted into the center comes out clean
  9. Cool in pan for 10 minutes before removing to cool completely.
